Simmering Soups for Chilly Vegas Nights

3 Easy Soup-er Recipes!

With cool evenings upon us, Home Life Concierge wants to share a few of our favorite wintertime soup recipes. When the temperature starts to drop, we believe nothing tastes better than a delicious bowl of soup!  These recipes are fast, easy and sure to be a hit with you and your family!

 
Jim's Hearty Chili
1 lb. sausage
1 lb. ground beef
2 cups chopped onion
1 cup chopped red pepper
3 cloves garlic, minced
¼ cup flour
3 tbsp. chili powder
2 tsp. cumin seed
2 tsp. crumbled basil
2 tsp. oregano
1 tsp. salt
2 28 oz. cans of Italian tomatoes
1 20 oz. garbanzo beans
1 15 oz. kidney beans
3 tbsp. Worcestershire
1 ¼ tsp. Tabasco
 
Cook sausage, beef, onion, red pepper, and garlic. Drain. Stir in flour, chili powder, cumin, basil, oregano, and salt. Cook 1 minute. Add tomatoes; break up with back of spoon. Add garbanzo beans, kidney beans, Worcestershire, and Tabasco. Cook on low for two to three hours for best flavor. Enjoy!
 
Tip: Pour leftovers over a baked potato for a tasty second meal!
 
Lori's Zesty Chicken, Corn and Lime Soup
1 ½ tsp. vegetable oil
1 ½ c. chopped onion
3 minced garlic cloves
3 cans chicken broth
1 can diced tomatoes
2 cups frozen corn kernels
4 tsp. minced seeded jalapeno chilis
1 ½ tsp. ground cumin
2 cans chicken breast 
6 tbsp. chopped fresh cilantro
2 tbsp. lime juice

Heat oil over medium heat. Add onion and garlic and sauté until onion is tender. Add broth, tomatoes with juices, corn, jalapeno chilis, and cumin and bring to a boil. Reduce heat and simmer until corn is tender. Add chicken and simmer about 3 minutes. Stir in cilantro and lime juice. Season with salt and pepper. Serve with Lime Tostitos!
 
Janet's De-Lite-ful Turkey Meatball Soup
1 package Italian Turkey Meatballs (we recommend Foster Farms)
1 yellow onion, chopped
3 tsp. garlic, minced
64 oz. chicken broth
1 bag spinach
1 tbsp. Italian seasoning
 
Sauté onion and garlic with a small amount of chicken broth in a Dutch oven. Add frozen turkey meatballs. When thawed, cut meatballs into quarters. Add chicken broth and seasoning. Bring to a boil. Add spinach and remove from heat. Bon Appetit!
